Parsley, sage, rosemary and thyme were herbs that represented comfort, strength, love and courage in Medieval times and these were the traits required of Benjamin to succeed in winning her over which, of course, he ultimately does. Simon heard the song while on tour in Britain and wisely incorporated his interpretation into the score.
