...Dec. 23 each year sees the "Noche de Rabanos," or "Night of the Radishes" celebration in Oaxaca, Mexico. Artisans and amateurs create intricate displays carved from radishes to enter into the Christmas contest. Special radishes harvested around Dec. 18 are the required medium and give the artists only a few days to get their designs carved and ready for display.
