...James Beard compiled his recipes in his first cookbook in the late 1930s. He was a strong proponent of gourmet cooking and culture. Beard was born in 1903 in Portland, Oregon. Along with a partner, he opened a catering service in 1937 in New York. After WWII, he landed a gig on an early televised cooking show on NBC.
