Glycemic index (GI) is a measure of how quickly a food can make your blood sugar (glucose) rise. Only foods that contain carbohydrates have a GI. Foods such as oils, fats, and meats do not have a GI.
It iss a number from 0 to 100 assigned to a food, with pure glucose arbitrarily given the value of 100, which represents the relative rise in the blood glucose level two hours after consuming that food. The GI of a specific food depends primarily on the quantity and type of carbohydrate it contains, but is also affected by the amount of entrapment of the carbohydrate molecules within the food, the fat and protein content of the food, the amount of organic acids (or their salts) in the food, and whether it is cooked and, if so, how it is cooked.
It is a major concern for diabetics to control their sugar level and can be used to help people realize they need to change their diet to prevent type 2 and 3 diabetes.
There are 3 major types of diabetes: type 1, type 2 and gestational. Type 1 is congenital, you are born with it. Type 2 is caused by your diet and Type 3 occurs in pregnant women. Type 2 and Type 3 can be prevented, managed and cured, Type 1 can't.
