As for the cocktail, Chile claims it was invented in the town of Iquique, while Peru says it was an American bartender, Victor Morris, who first mixed it in Lima in the early 20th century. The two versions are slightly different, too. The Peruvian pisco sour includes Peruvian pisco, lime juice, simple syrup, egg white, ice, and Angostura bitters. Chile’s has Chilean pisco and pica lime — without the bitters and egg white.:
