He brought them to Walla Walla, where he and neighboring immigrant gardeners developed the onion’s flavor, shape, and hardiness over generations. In 2007, the Walla Walla sweet onion was designated Washington state’s official vegetable, as part of a class project for a seventh-grade honors social-studies class. Walla Walla onions can only be grown in the Walla Walla area, which is the center of a major agricultural region known for its wheat, barley, corn, potatoes, wine, and more. The name “Walla Walla” itself comes from the Nez Perce term for a place where a small stream enters a larger one.:
