That happened in Switzerland in 1911, when alchemists Fritz Stettler and Walter Gerber heated hard Swiss cheese (known as Emmental) with sodium citrate to create a cheese with a longer shelf life (and a soft, gooey texture). But it was Canadian James Lewis Kraft who was the first to patent his eponymous cheese in 1944, which became known as American cheese. His version of processed cheese, Kraft singles, was more sliceable, shippable, and longer lasting — using emulsifying salts to produce its velvety melt. :
