The French Bresse has been around for over 500 years and is considered one of the most popular chicken breeds of all time. There are over 1million Bresse hens today! Why 3 french hens and one partridge? Hens are easy to breed so a restaurant or butcher can always have them on hand whereas a partridge is a bit tricker since it needed to be hunted. Tres cool, oui?
